THE CHEF JULIEN MARSEAULT

Julien Marseault is a Pays d’Iroise’s child… He grew up just a stone’s throw from Brest where he learnt his future profession alongside Patrick Le Guen at the hotel and restaurant l’Agape in Ste Marine…

In 2002, at the age of 21, he joins Guy Savoy brigade’s in Paris… An incredible experience that last two years. In 2004, he leaves for the Grand Hotel Cala Rossa in Porto Vecchio in Corsica… After a short stop at the Lausanne’s Beau Rivage Palace, he returnes in Corsica as the restaurant Le Troubadour’s Chef, where Michelin gives him the hope award. But it is in March 2011, while Chef of the U Santa Marina’s kitchens in Porto Vecchio that ivi he wins the famous star… Julien will return to Bretagne to open the table of the Château de Sable in June 2013. For him, the success of a dish is above all : “The simplicity, the choice of the product, the baking, the seasonning”…

Then a new adventure begins for Julien in 2018. He leaves to settle in Crillon Le Brave Hotel’s kitchens in Provence. Back in Bretagne, he creates PARTAGE which opens in December 2019. The concept est convivial, innovative and gourmet. The principle is to share the dishes, arranged on specially designed wooden display. We are delighted to find the chef’s fair, tasty and generous cuisine, based on quality products and know-how of a starred Chef. Very special mention for the kouign amann of potato and black pudding (a nod from the Chef Patrick Le Guen), the “bouillabreizh” and its line fishes.
